CHARRED MISO CAGGABE

Cabbage is extremely underrated yet versatile. Many ways to add it to a dish or have it be a dish on its own. 

This sweet miso charred cabbage is great as a side dish or could be the main if it's made into a larger piece. 

SAUCE:

1/2 cup Organic Miso Paste
1/4 cup Brown Sugar
1/3 cup Stock
2 oz Sake

PREPARATION:

In salted boiling water, drop the pieces of cabbage in and cook for approximately 5 minutes or until you can poke a knife through easily. Don't overcook or else the cabbage will become mushy.

Meanwhile, heat all the ingredients for the sauce in a small sauce pot on low heat. Once it all comes to a simmer and sugar is dissolved turn off the heat. Add more stock if the sauce is still too thick.

Take the cabbage out of the water and pat dry if you have to. In a saute pan heat some oil. Sear the cabbage on each side until nicely golden brown or charred. Finish with an ounce of butter.

Spoon on the miso sauce onto a plate. Place the cabbage on top and add on desired toppings. Here we have crushed pistachios, sesame seeds, chives, and fresh dill!
