Yuba, the Japanese term for soybean sheets can come fresh or dried. It is made by boiling soy milk & lifting the sheet that forms at the surface.
Dating back to the 16th century, countries like China, Korea, and Japan would use the sheets to record written documentation. However, it is a very good addition to any dish.
It's loaded with protein, calcium, and iron. Often eaten in soups, stir fry, as noodles, and more. Great for vegetarian & vegan dishes! If you are a fan of tofu then this will be fun to eat as well.
